Crispy Chicken

    Prepare chicken

    Slice each chicken breast horizontally into 2 thinner cutlets (or pound to 1/2-inch thickness) so you end up with 4 pieces total. Pat dry with paper towels.

    Marinate in buttermilk

    Place the chicken cutlets in a shallow dish and pour 1 cup buttermilk over them. Cover and refrigerate for at least 30 minutes (up to 4 hours). This tenderizes and helps the coating stick.

    Make breading station

    In one shallow bowl, whisk 2 eggs. In a second bowl combine 1 cup all-purpose flour with 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp salt, and 1/2 tsp black pepper. In a third bowl mix 1 cup panko breadcrumbs with 1/2 cup grated Parmesan.

    Bread the chicken

    Remove each chicken piece from the buttermilk, letting excess drip off. Dredge in the seasoned flour, dip into the beaten eggs, then press firmly into the panko-Parmesan mixture to coat evenly. Place on a wire rack while you heat the oil.

    Fry until crispy

    Pour ~1 cup vegetable oil into a large skillet to reach about 1/4-inch depth and heat over medium-high to 350°F (175°C). When hot, carefully add chicken pieces (work in batches if needed). Fry 3-4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a paper towel-lined plate or wire rack to drain.

Wrap Assembly & Melted Parmesan

    Prepare vegetables

    While chicken finishes, slice the tomato into thin rounds and tear or chop the lettuce into roughly bite-size pieces. Season tomato lightly with a pinch of salt, pepper, and optional 1 tsp lemon juice.

    Melt Parmesan on chicken

    Wipe skillet clean and reduce heat to low-medium. Add 1 tbsp butter if desired. Place one fried chicken piece in the skillet, sprinkle about 2 tbsp shredded Parmesan evenly over the top, and cover with a lid for 30–60 seconds until the cheese melts. Repeat for remaining pieces. Keep chicken warm in a low oven (about 200°F / 95°C) if assembling later.

    Warm the spinach wraps

    Warm each spinach tortilla in a dry skillet over low heat 10–20 seconds per side or in the microwave for 10–15 seconds wrapped in a damp paper towel. This makes them pliable for rolling.

    Assemble the wraps

    Lay a warmed spinach wrap flat. Spread about 1/4 cup ranch dressing down the center of the wrap. Place 1/2 of the lettuce (about 1 cup) on the ranch, top with 1 fried chicken cutlet with melted Parmesan, add 4–5 tomato slices, and drizzle another tablespoon of ranch if desired. Fold the bottom edge up over the filling, fold the sides in, and roll tightly to form a burrito-style wrap. Repeat for the second wrap.

    Optional sear and serve

    If you prefer a slightly crisped exterior and to help seal the wrap, place assembled wraps seam-side down in the skillet over medium heat and press gently for 30–45 seconds per side until golden. Slice each wrap in half on the diagonal and serve immediately.

    Taste and adjust seasoning: sprinkle extra Parmesan, a pinch of salt or black pepper, or a little extra ranch if desired. Serve hot.
