Brewed Coffee

Measure and grind
Weigh or measure approximately 0.05 cups (about 8–9 g) of whole coffee beans per 8 fl oz (240 ml) cup. Grind to a medium-coarse texture for pour-over or drip brew, or medium-fine for a drip machine. Use a scale if available for accuracy.

Heat water
Bring filtered water to a temperature between 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let sit for 30 seconds.

Bloom (pour-over or manual brew)
Place the ground coffee into your filter and wet it with a small amount of hot water (about twice the weight of the grounds) to let it bloom for 30–45 seconds. This releases trapped gases and improves extraction.

Brew
Continue pouring the remaining hot water slowly and evenly over the grounds in a circular motion until you reach 0.8 cups (about 200 ml) of brewed coffee. For drip machines, simply add water and start the brew cycle.

Serve
Remove the filter or carafe when brewing is complete. Pour the brewed coffee into a cup and let it cool slightly before adding optional add-ins.
