Cinnamon Syrup

Make quick cinnamon syrup
Combine 1 tablespoon granulated sugar and 1 tablespoon water in a small saucepan or microwave-safe container. Add 1 teaspoon ground cinnamon and heat gently until sugar dissolves and mixture is fragrant (about 1–2 minutes on medium-low stovetop or 30–45 seconds in microwave). Stir thoroughly to fully incorporate the cinnamon. Remove from heat and let rest for 1 minute. This yields a concentrated cinnamon syrup to flavor the latte.

Brew espresso
Pull two shots (about 2 ounces) of espresso using your espresso machine. If you don't have an espresso machine, brew 2 ounces strong coffee using a Moka pot or Aeropress.

Melt white chocolate
Place 2 tablespoons white chocolate chips in a heatproof cup or small saucepan. Add 1 tablespoon of the hot espresso (reserved from the pulled shots) or 1 tablespoon hot milk and gently melt the chips, stirring until smooth. This helps the white chocolate emulsify into the milk.

Steam milk
Steam 10 fl oz whole milk with a steam wand to about 150–155°F (65–68°C), producing velvety microfoam. If no steam wand: heat milk in a small saucepan until just before simmering (around 150°F / warm to the touch) and froth by whisking vigorously or using a handheld frother for 20–30 seconds to create foam.

Lightly dust 1 teaspoon ground cinnamon over the foam. If desired, grate or shave a small amount of white chocolate over the top (about 1 teaspoon) for extra visual appeal and sweetness. Serve immediately.
