    Remove the T-bone steaks from the refrigerator and let them sit at room temperature for at least 30 minutes before cooking. This helps them cook more evenly.

    Pat the steaks dry with paper towels. Rub both sides with olive oil. Sprinkle kosher salt, black pepper, and garlic powder evenly over both sides of the steaks.

    Preheat your grill to high heat or heat a cast-iron skillet over medium-high heat until it is very hot.
