Preparation

  1. 1

    Marinate the Steak

In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Coat the T-bone steaks in the marinade and let them sit for at least 30 minutes, or up to 2 hours in the fridge for more flavor.

  2. 2

    Prepare the Sides

While the steak marinates, wash the asparagus and baby potatoes. Cut the baby potatoes in half and set aside.

Cooking

  1. 3

    Cook the Potatoes

In a pot, bring salted water to a boil and add the halved baby potatoes. Cook for about 15 minutes or until fork-tender. Drain and set aside.

  2. 4

    Grill the Steak

Preheat your grill to medium-high heat. Remove the T-bone steaks from the marinade and place them on the grill. Cook for about 4-5 minutes on each side for medium-rare, or longer to reach your desired doneness.

  3. 5

    Sauté the Asparagus

In a skillet over medium heat, melt butter and add the asparagus. Sauté for about 5-7 minutes or until tender yet crisp. Season with salt and pepper to taste.

  4. 6

    Combine and Serve

Once the steaks are cooked, let them rest for a few minutes before slicing. Serve the T-bone steaks with the sautéed asparagus, boiled baby potatoes tossed with butter and chopped parsley.
