Method

Pasta Preparation

  1. 1

    Cook the Linguini

In a large pot, bring salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Vegetable Preparation

  1. 2

    Prepare the Broccoli

In the last 2 minutes of cooking the linguini, add the broccoli florets to the pot. Drain the pasta and broccoli together. Set aside.

  2. 3

    Sauté the Tomatoes

In a large skillet over medium heat, add a little olive oil and sauté the cherry tomatoes until they are soft and slightly blistered, about 3-4 minutes. Remove from the skillet and set aside.

Shrimp Cooking

  1. 4

    Cook the Shrimp

In the same skillet, add a bit more olive oil if necessary. Add the shrimp and season with salt and pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

Herbed Scampi Butter Preparation

  1. 5

    Make the Scampi Butter

In a bowl, mix together the softened butter, minced garlic, chopped parsley, lemon juice, red pepper flakes, salt, and black pepper until well combined.

Final Assembly

  1. 6

    Combine Everything

In the skillet, return the shrimp and tomatoes to the heat. Add the cooked linguini and broccoli. Stir in the herbed scampi butter and toss everything together, adding reserved pasta water as needed to create a sauce.

  2. 7

    Serve

Serve hot, garnished with grated Parmesan cheese on top.
