Preparation
- 1
Prepare the Seafood
Preheat your oven to 180°C (350°F). Cut the haddock fillets into bite-sized pieces and set aside. In a large bowl, combine the shrimp and scallops, ensuring they are evenly mixed.
- 2
Prepare the Vegetables
Cook the baked potatoes until tender, then allow to cool slightly before dicing them into small pieces. Steam the broccoli florets until they are bright green and just tender, about 3-4 minutes.
Assembling the Casserole
- 3
Combine Ingredients
In a large mixing bowl, combine the diced potatoes, steamed broccoli, seafood mixture (haddock, shrimp, and scallops), lemon juice and zest, and dry white wine. Gently fold in the herb stuffing mix until all ingredients are evenly coated.
- 4
Transfer to Baking Dish
Transfer the mixture into a greased casserole dish, spreading it out evenly. Top with garlic breadcrumbs, ensuring an even layer across the top.
Baking
- 5
Bake the Casserole
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the seafood is cooked through and the topping is golden brown.
- 6
Serve
Once baked, remove the casserole from the oven and let it cool for a few minutes. Serve hot, garnished with additional lemon wedges if desired.
