Prepare Lobster Filling

    Mix the Lobster Filling

    In a medium bowl, combine the fresh lobster claw and knuckle meat, Old Bay seasoning, lemon juice, mayonnaise, salt, and black pepper. Gently mix until the lobster meat is well-coated. Be careful not to break up the lobster too much. Set aside.

Prepare Brioche Roll

    Griddle the Brioche

    In a skillet over medium heat, melt the butter. Once melted, place the brioche rolls cut-side down in the skillet. Cook until golden brown and crispy, about 2-3 minutes. Remove from heat.

Assemble the Lobster Roll

    Build Your Lobster Roll

    On the bottom half of each griddled brioche roll, place a couple of bibb lettuce leaves. Spoon the lobster filling generously over the lettuce. Top with the other half of the brioche roll.

Serve

    Plate and Garnish

    Serve the lobster rolls on a plate alongside homemade potato chips and a small cup of coleslaw for garnish.
