Wrap Preparation

    Grill the Pita

    Preheat a grill or grill pan over medium heat. Place the pita bread on the grill and cook for about 2 minutes on each side, until warm and slightly charred. Remove from heat and set aside.

    Prepare the Veggie Mix

    In a large bowl, combine the chickpeas, sun-dried tomatoes, grape tomatoes, red onion, green pepper, roasted red peppers, Kalamata olives, feta cheese, parsley, cucumber, and Greek vinaigrette. Toss gently to combine all the ingredients thoroughly.

    Assemble the Wrap

    Take one grilled pita and layer with a handful of baby spinach. Spoon a generous amount of the veggie mix over the spinach. Fold the sides of the pita in and then roll it up tightly. Repeat with the remaining pitas and filling.

Herb-Buttered Green Beans Preparation

    Cook the Green Beans

    In a large pot, bring salted water to a boil. Add the trimmed green beans and cook for about 4-5 minutes or until they are bright green and crisp-tender. Drain and set aside.

    Prepare Herb Butter

    In a skillet over medium heat, melt the butter. Add the chopped fresh herbs and stir for about 1 minute until fragrant.

    Combine and Serve

    Add the drained green beans to the skillet with the herb butter. Toss to coat, then season with salt and black pepper to taste. Cook for another 1-2 minutes until heated through. Serve alongside the Mediterranean veggie wraps.
