Prepare the Vegetables
Wash the bibb lettuce leaves thoroughly, pat dry, and set aside. Peel the carrot and julienne it into thin strips. Chop the scallions into thin slices, separating the green tops from the white parts.

Prepare the Almonds
If your almonds are whole, chop them roughly. You can also toast them lightly in a dry skillet over medium heat for 3-5 minutes for added flavor.

Prepare the Chow Mein Noodles
If you are using dry chow mein noodles, cook them according to package instructions, then drain and set aside.

Assemble the Wraps
Take a bibb lettuce leaf and place a small amount of the julienned carrot, a few bean sprouts, and a spoonful of the Korean BBQ sauce in the center. Top with a sprinkle of chopped almonds and cooked chow mein noodles.

Wrap and Serve
Fold the sides of the lettuce leaf over the filling, then roll it up from the bottom to create a wrap. Repeat this process for the remaining ingredients. Serve the wraps with extra Korean BBQ sauce on the side for dipping.
