Prepare the Turkey
Preheat your oven to 350°F (175°C). Rinse the turkey breast under cold water and pat it dry with paper towels. Rub the turkey with olive oil, then season with salt and black pepper.

Roast the Turkey
Place the turkey breast on a roasting pan and insert it into the preheated oven. Roast for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C). Let it rest for 10-15 minutes before slicing.

While the turkey is roasting, collect the drippings from the roasting pan. In a saucepan over medium heat, whisk together the flour and drippings until smooth. Gradually add the chicken broth, stirring until thickened. Season with salt and black pepper to taste.

In a skillet, melt the butter over medium heat. Add the diced celery and onion, cooking until softened (about 5 minutes). Combine the cooked vegetables with the stuffing mix and chicken broth in a large bowl. Stir until moistened.
