    Slice the Onions

    Peel and thinly slice the yellow onions. Aim for uniform slices for even cooking.

    Prep the Sourdough

    Butter one side of each slice of sourdough bread and set aside for later.

Cooking the Soup

    Sauté the Onions

    In a large pot, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the dry sherry and cook for another 5 minutes, scraping the bottom of the pot. Then add the beef broth, thyme, black pepper, and additional salt to taste. Bring to a simmer and let cook for 20 minutes.

    Toast the Sourdough

    While the soup is simmering, toast the buttered sides of the sourdough bread until golden brown, either in a pan or under a broiler.

    Serve the Soup

    Ladle the hot soup into bowls, place a slice of toasted sourdough on top of each bowl, and generously sprinkle with provolone cheese.

    Melt the Cheese

    Place the bowls under a broiler for 2-3 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve immediately.
