Dip Preparation

Prep the Spinach
In a large pot, bring water to a boil. Blanch the fresh spinach for about 2-3 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain and chop the spinach finely.

Combine Ingredients
In a medium mixing bowl, combine the softened cream cheese, sour cream, and shredded cheddar cheese. Mix until smooth and well combined.

Heat the Dip
Transfer the mixture to an oven-safe dish and bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the dip is heated through and bubbly.

Combine Pico de Gallo Ingredients
In a bowl, mix the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Stir well to combine and let it sit for at least 10 minutes to allow the flavors to meld.

Once the dip is ready and the pico de gallo has rested, serve the spicy cheese and spinach dip warm alongside the pico de gallo and tortilla chips.
