Prepare the Crispy Chicken

Coat the Chicken
Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip in beaten eggs, and then coat with breadcrumbs. Ensure each piece is well coated.

Fry the Chicken
Heat oil in a frying pan over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from the pan and let them drain on paper towels.

Mix the Salad Ingredients
In a large bowl, combine mixed greens, diced tomato, sliced cucumber, shredded carrot, thinly sliced red onion, and chopped scallion.
Make the Dressing

Combine Dressing Ingredients
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to taste until well combined.
Assemble the Salad

Combine Everything
Slice the fried chicken into strips and add them to the salad bowl. Sprinkle shredded cheddar and jack cheese, and bacon bits over the top. Drizzle the dressing over the salad and toss gently to combine.
