    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel to drain, leaving the rendered fat in the pot.

    Sauté Vegetables

    In the same pot with the bacon fat, add the chopped onion, celery, and minced garlic. Sauté until the vegetables are soft and translucent, about 5 minutes.

    Prepare Potatoes

    Peel and dice the potatoes into small cubes. Add them to the pot along with the clam juice. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

Cooking the Chowder

    Add Clams and Cream

    Once the potatoes are cooked, add the fresh clams and heavy cream to the pot. Stir well and cook for an additional 5-10 minutes, until the clams have opened and the chowder is heated through.

    Season the Chowder

    Add thyme, parsley, salt, and black pepper to the chowder. Stir to combine and adjust seasoning to taste.
