Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips
Remove potato slices from water, pat dry with paper towels, and carefully add them in batches to the hot oil. Fry until golden brown and crispy, about 3-5 minutes per batch.
- 6
Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.
