Steak Preparation

    Season the Steak

    Begin by seasoning the Certified Angus Beef Sirloin Steak generously with salt and black pepper on both sides. Allow the steak to sit at room temperature for about 30 minutes.

    Preheat the Grill

    Preheat your grill to high heat (approximately 450°F to 500°F). If using a charcoal grill, prepare the coals until they are glowing red.

    Oil the Grill Grates

    Using a paper towel dipped in olive oil, carefully oil the grill grates to prevent sticking.

    Grill the Steak

    Place the steak on the hot grill and cook for about 4-5 minutes on one side for medium-rare. Flip the steak and cook for another 4-5 minutes on the other side. Adjust cooking time to your desired doneness.

    Rest the Steak

    Once cooked to your liking, remove the steak from the grill and let it rest for approximately 5 minutes before slicing. This allows the juices to redistribute.

Demi Glace Sauce Preparation

    Sauté Shallots

    In a saucepan over medium heat, melt the butter. Add finely chopped shallots and sauté until they are translucent, about 2-3 minutes.

    Add Wine and Reduce

    Pour in the red wine and bring to a boil. Reduce the heat and let it simmer until the wine is reduced by half, about 10 minutes.

    Incorporate Beef Stock

    Add the beef stock, thyme, and bay leaf to the sauce. Bring to a gentle simmer and cook for an additional 15-20 minutes, allowing the sauce to thicken slightly.

    Season the Sauce

    Taste the sauce and season with salt and black pepper as needed. Remove the bay leaf before serving.
