Steak Preparation

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steaks with kosher salt and freshly ground black pepper.

    Heat the Pan

    In a large cast-iron skillet or heavy pan, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Place the steaks in the hot pan and sear for 4-5 minutes on one side without moving them.

    Add Butter and Rosemary

    Flip the steaks and add the butter and rosemary to the pan. Continue cooking while basting the steaks with the melted butter for another 4-5 minutes for medium-rare.

    Rest the Steak

    Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.

    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Place them in a pot of salted water and bring to a boil.

    Cook the Potatoes

    Cook the potatoes for about 15-20 minutes or until fork-tender. Drain and return them to the pot.

    Make Potato Puree

    Add heavy cream, parmesan cheese, salt, and black pepper to the potatoes. Mash until smooth and creamy.

    Prepare the Asparagus

    While the potatoes are cooking, trim the ends of the asparagus and steam or boil for about 5-7 minutes until tender.

    Season Asparagus

    Season the asparagus with salt and a drizzle of olive oil before serving.
