Preparing the Fries

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let it sit for about 15 minutes.

Heat the Oil
In a large, deep pot or fryer, heat the oil to 180°C (350°F). Use a thermometer to check the temperature.

Coat the Fries
Take the sidewinder fries and dip them into the batter until fully coated.

Fry the Fries
Carefully lower the battered fries into the hot oil in batches. Fry for 4-5 minutes or until golden brown and crispy. Remove them and place on paper towels to drain excess oil.
Assembling the Loaded Fries

Layer the Toppings
Place the fried sidewinder fries on a serving platter. Evenly sprinkle the crumbled bacon over the fries.

Add Cheese Sauce
Drizzle the craft ale cheese sauce generously over the fries and bacon.

Finish with Chives and Sour Cream
Top with chopped chives and dollops of sour cream. Serve immediately while hot.
