Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This helps remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Prepare Fillings

    Slice the Salmon

    Cut the fresh salmon into thin strips, about 1/4 inch thick.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and slice the flesh into thin strips.

    Cut the cucumber in half lengthwise and slice into thin strips.

Assemble the Sushi

    Lay Out the Nori

    Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface.

    Spread the Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Lay strips of salmon, avocado, and cucumber across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly. Roll until the edge of the nori touches the rice. Moisten the edge of the nori with a little water to seal.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Wet the knife between cuts to prevent sticking.

Serve

    Plate the Sushi

    Arrange the sushi pieces on a serving plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
