Chocolate Lava Cake

    Melt the Chocolate

    In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

    Prepare the Batter

    In a mixing bowl, whisk together the granulated sugar and eggs until light and fluffy. Stir in the melted chocolate mixture, vanilla extract, and a pinch of salt. Gradually fold in the all-purpose flour until just combined.

    Bake

    Preheat the oven to 200°C (390°F). Grease ramekins and pour the batter in, filling them about 3/4 full. Bake for 12-14 minutes until the edges are firm but the center is still soft.

    Serve

    Let the cakes cool for 1 minute, then invert them onto plates and serve immediately for that gooey center.

Cheesecake

    Prepare the Crust

    In a bowl, mix the graham cracker crumbs with melted unsalted butter and press it firmly into the bottom of a springform pan. Bake for 10 minutes at 180°C (350°F).

    Mix the Filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing just until incorporated.

    Pour the cream cheese filling over the crust in the springform pan. Bake at 160°C (320°F) for about 50 minutes, or until the center is set and slightly jiggly.

    Let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Refrigerate for at least 4 hours before serving.

Fruit Tart

    Make the Tart Crust

    In a bowl, mix all-purpose flour, granulated sugar, and diced unsalted butter until crumbly. Add the egg and vanilla extract, mixing until a dough forms. Chill for 30 minutes.

    Roll out the chilled dough and press it into a tart pan. Bake at 180°C (350°F) for 20 minutes or until golden brown. Let it cool completely.

    In a bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread the cream evenly over the cooled tart crust.
