Crab Cakes Preparation

Prepare the Mixture
In a large mixing bowl, combine the crab meat, mayonnaise, bread crumbs, Dijon mustard, egg, green onions, Worcestershire sauce, Old Bay seasoning, salt, and black pepper. Mix gently until just combined to avoid breaking up the crab meat.

Shape the Cakes
Using your hands, form the mixture into small patties, about 2 inches in diameter. You should be able to make around 8-10 cakes depending on the size.

Chill the Cakes
Place the formed crab cakes on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to help them hold their shape during cooking.

Cook the Cakes
In a large skillet, heat the olive oil over medium heat. Once hot, add the crab cakes in batches, cooking for 4-5 minutes on each side until golden brown and crispy. Remove and let drain on paper towels.

Combine Aioli Ingredients
In a small bowl, mix the mayonnaise, sriracha sauce, honey, lemon juice, and minced garlic clove until smooth and well combined.

Adjust Flavor
Taste the aioli and adjust the spiciness or sweetness by adding more sriracha or honey as desired.
