Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and set aside to cool.

Blend the Filling
In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth. Gradually add in the granulated sugar and continue to mix until well combined.

Add Remaining Ingredients
Mix in the sour cream and vanilla extract, blending until smooth. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

Pour into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Prepare the Topping
Before serving, wash and pat dry the fresh berries. If desired, sprinkle with powdered sugar for added sweetness.

Slice the chilled cheesecake, top with fresh berries, and serve immediately.
