Salad Preparation

Prepare the Lettuce
Wash the Romaine lettuce thoroughly under cold water. Remove any damaged leaves. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water. Chop the lettuce into bite-sized pieces.

Grate the Parmesan
Using a grater, finely grate the aged Parmesan cheese and set aside for garnish.
Dressing Preparation

Make the Dressing
In a medium bowl, combine the mayonnaise, anchovy paste, minced garlic, lemon juice, Dijon mustard, and Worcestershire sauce. Whisk together until smooth.

Add Olive Oil
Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Season with salt and black pepper to taste.
Assembly

Combine Ingredients
In a large salad bowl, add the chopped Romaine lettuce. Drizzle the prepared Caesar dressing over the lettuce and toss gently until evenly coated.

Top the salad with grated Parmesan cheese and mini crostinis. Serve immediately for the best texture and flavor.
