Prepare the Burger Patty
In a large mixing bowl, combine the ground Wagyu beef, salt, and black pepper. Gently mix until just combined, being careful not to overwork the meat.

Shape the Patties
Divide the mixture into two equal portions and shape each portion into a patty about ¾ inch thick. Make a slight indentation in the center of each patty to help them cook evenly.
Cooking

Cook the Patties
Preheat a grill or frying pan over medium-high heat. Place the patties on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Add a slice of cheddar cheese on top of each patty during the last minute of cooking to melt.

Toast the Buns
While the patties are cooking, slice the brioche buns in half and toast them on the grill or in a toaster until golden brown.
Assembly

Assemble the Burger
Spread mayonnaise on the bottom half of each toasted brioche bun. Place a cooked Wagyu patty with melted cheddar on top, followed by a generous handful of shredded lettuce and pickles. Top with the other half of the bun.
