Method
Preparation
- 1
Prepare the Vanilla Beans
Split the vanilla beans lengthwise with a sharp knife and scrape out the seeds. Set the seeds aside and add the split pods to the pot.
- 2
Mix the Ingredients
In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt. Add the vanilla bean pods and seeds to the mixture.
Cooking
- 3
Heat the Mixture
Place the saucepan over medium heat and gently heat the mixture, stirring occasionally, until it is hot but not boiling.
- 4
- 5
Temper the Egg Yolks
Slowly pour a small amount of the hot cream mixture into the egg yolks while whisking constantly. This will temper the yolks and prevent them from curdling.
- 6
- 7
Cook the Custard
Continue to cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).
- 8
Strain the Mixture
Remove the saucepan from heat and strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pods and any cooked egg bits.
Finishing Touches
- 9
Cool the Custard
Allow the custard to cool to room temperature, then stir in the vanilla extract if using. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
- 10
Serve
Once cooled, the vanilla custard can be used in various desserts or served on its own as a creamy vanilla treat.
