Prepare the Ingredients
Gather all ingredients and prepare them. Rinse and drain the black beans, chop the lettuce, slice the jalapenos, and if using frozen corn, thaw it.

Assemble the Quesadilla
On one half of each flour tortilla, layer ghost pepper cheese, pico de gallo, corn, black beans, jalapenos, and shredded lettuce.

Fold and Cook
Fold the tortilla over the filling to create a half-moon shape. Heat a non-stick skillet or griddle over medium heat. Place the quesadilla on the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Remove the quesadilla from the skillet, let it rest for a minute, and then cut into wedges. Serve with guacamole and sour cream on the side.
