Marinate the Chicken
In a large bowl, combine the buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper. Whisk until smooth. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Coating
In a shallow dish, mix together the all-purpose flour, cornstarch, and cayenne pepper. Set aside.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Fry the chicken for about 7-8 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Make the Jalapeno Aioli
In a food processor, combine mayonnaise, fresh jalapenos (seeded and chopped), garlic cloves, and lemon juice. Blend until smooth. Adjust seasoning with salt if needed.

Assemble the Sandwich
Toast the sourdough bread slices until golden. Spread a generous amount of jalapeno aioli on each slice. Layer shredded lettuce, fried chicken, pickles, and drizzle with chile de arbol sauce. Top with another slice of sourdough. Serve immediately.
