Main Ingredients

Seasonal Vegetables

Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, salt, and black pepper. Place the salmon fillets in the marinade and ensure they are evenly coated. Let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Prepare the Grill

While the salmon is marinating, preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become white-hot.

Preparation of Vegetables

  1. 3

    Prepare the Vegetables

Wash and trim the asparagus, cut the bell peppers into strips, and slice the zucchini into rounds.

  2. 4

    Season the Vegetables

In a separate bowl, toss the asparagus, bell peppers, and zucchini with olive oil, salt, and black pepper.

Grilling

  1. 5

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets on the grill. Grill for about 5-7 minutes on each side, or until the salmon flakes easily with a fork and has nice grill marks.

  2. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill. Grill for about 5-10 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 8

    Garnish (optional)

You may garnish with additional lemon wedges or fresh herbs if desired.
