Brioche French Toast
Mixed Berries
Candied Pecans
Whipped Cream
Method
Prepare the French Toast
- 1
Make the Custard
In a large mixing bowl, whisk together the eggs, whole milk, granulated sugar, Grand Marnier, vanilla extract, and ground cinnamon until well combined.
- 2
Soak the Brioche
Dip each slice of brioche bread into the custard mixture, allowing it to soak for a few seconds on each side. Let any excess custard drip off.
- 3
Cook the French Toast
In a large skillet or griddle, melt 2 tablespoons of butter over medium heat. Cook the soaked brioche slices for about 3-4 minutes on each side, or until golden brown. Repeat with the remaining butter and bread.
Prepare the Mixed Berries
- 4
Wash the Berries
Rinse the strawberries, blueberries, and raspberries under cold water. Pat dry with a paper towel and set aside.
Make the Candied Pecans
- 5
Cook the Pecans
In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the pecans, brown sugar, and salt. Stir frequently until the sugar has melted and the pecans are well coated and caramelized, about 5-7 minutes. Remove from heat and let cool on parchment paper.
Prepare the Whipped Cream
- 6
Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip until soft peaks form.
Assemble the Dish
- 7
Plate the French Toast
Place two slices of the cooked French toast on a plate. Top with a generous portion of mixed berries, sprinkle with candied pecans, and add a dollop of house-made whipped cream.
