Method

Directions

  1. 1

    Prepare the Ramekins

Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with flour. This will help the cakes to easily release once baked.

  2. 2

    Melt Chocolate and Butter

In a medium microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth. Let it cool slightly.

  3. 3

    Mix Eggs and Sugar

In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and fluffy. This should take about 2-3 minutes of vigorous whisking.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while continuously whisking to combine. Add the vanilla extract and a pinch of salt, then mix until smooth.

  5. 5

    Add Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix; the batter should still be slightly lumpy.

  6. 6

    Fill Ramekins

Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center remains soft and slightly jiggly.

  8. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges, then invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on the side.
