Preparation

    Cook the Protein

    In a skillet over medium heat, cook the bacon and jalapeno bacon until crispy. Remove and drain on paper towels. If using sausage, cook until browned, breaking it apart with a spatula.

    Scramble the Eggs

    In a bowl, whisk together the eggs until well blended. Pour the eggs into the skillet and cook, stirring occasionally, until they are just set but still creamy.

    Prepare the Vegetables

    Dice the tomato, chop the chives, and finely chop the Spanish pimento.

    Make the Hollandaise Sauce

    In a double boiler, melt the butter. In another bowl, whisk egg yolks and lemon juice. Slowly add melted butter while whisking until thickened. Season with salt.

Assembly

    Combine Ingredients

    In a large mixing bowl, combine the scrambled eggs, cooked protein (bacon/sausage), diced tomato, chives, and Spanish pimento. Mix well.

    Fold in the pepper jack and cheddar cheese into the egg and protein mixture until evenly distributed.

    Fill the Tortillas

    Lay out the flour tortillas and spoon generous portions of the mixture onto each tortilla.

    Drizzle a spoonful of the hollandaise sauce over the filling in each tortilla.

    Roll the Burritos

    Fold the sides of the tortillas inwards and then roll them tightly from the bottom up to form burritos.

    In the skillet, place the rolled burritos seam-side down and cook for 2-3 minutes on each side until golden and crispy.
