    Prep

    If using egg white, separate and reserve 1/2 oz (about 1 egg white from a medium egg yields ~1 oz; use half). Chill a coupe or rocks glass in the freezer or fill with ice to chill.

    Dry Shake (if using egg white)

    Add light rum, aged rum, fresh lime juice, fresh pineapple juice, fresh orange juice, orgeat, simple syrup, egg white, and Angostura bitters into a cocktail shaker. Without ice, dry-shake vigorously for 15–20 seconds to build a foam.

    Wet Shake

    Add a generous scoop of ice to the shaker. Shake vigorously for 10–15 seconds until the shaker is very cold and well-aerated. If you didn't use egg white, combine all liquid ingredients and shake with ice for 12–15 seconds.

    Strain & Serve

    Discard ice from the chilled serving glass if used. Double-strain the cocktail into the chilled coupe or over fresh ice in a rocks/highball glass, depending on preference. The Tropic Sour can be served 'up' (no ice) in a coupe or 'on the rocks' over fresh ice.

    Finish

    Dash one additional Angostura bitters on the foam (if present) and garnish with a pineapple wedge and a mint sprig. Optionally grate a little nutmeg over the foam or float a thin lime wheel on top.

Garnish & Serving

    Place the pineapple wedge on the rim or skewer it and lay across the glass. Clap the mint sprig between your palms to release aromatics and tuck it beside the garnish. Serve immediately.
