Method
Cocktail Preparation
Chill and measure
Place a rocks glass in the freezer or fill with ice to chill while you prepare the cocktail. Measure Brugal 1888, orange liqueur, demerara syrup, and fresh lime juice into a mixing glass or shaker.
Prepare serving glass
Discard ice from your chilled rocks glass if you used it to chill. Place a single large ice cube into the glass.
Strain and finish
Double-strain or fine-strain the stirred cocktail into the prepared rocks glass over the large ice cube to remove small ice shards and any citrus solids.
Garnish & Aromatics
Express orange oils
Take the orange peel and hold it about 3–4 inches above the glass. With the peel flesh side down, give it a firm squeeze to express the oils over the cocktail, moving the peel across the surface so oils fall onto the drink.
Optional smoke
If using a smoked garnish, briefly char the cinnamon stick or small piece of wood with a torch until it smolders, then cover the glass with the smoking piece for 10–15 seconds to impart a light smoke. Remove the cover and place the smoked stick or charred wood on the glass as an aromatic accent.
Garnish
Drop the expressed orange peel into the drink, optionally add a Luxardo cherry, and serve immediately.
