Method
Optional Ginger Syrup

Make ginger syrup
Combine peeled sliced ginger, water and sugar in a small saucepan. Bring to a gentle simmer, stirring so sugar dissolves. Simmer 8–10 minutes until fragrant and slightly reduced.

Cool and store
Remove from heat, cool to room temperature, then strain out ginger. Refrigerate in a sealed container for up to 2 weeks. Use 1/2 oz per cocktail as listed above.
Rim & Garnish Preparation

Prepare rim
On a small plate, mix the fine salt, caster sugar and grated yuzu or grapefruit zest evenly. Rub a grapefruit wedge around the rim of a chilled coupe or rocks glass and dip the rim into the salt-sugar-zest mixture to coat. Set the glass aside.

Prepare garnish
If using fresh ginger garnish, slice very thinly. If using candied ginger, skewer or place on the rim with the grapefruit wheel.

Dry shake (if using egg white)
If using egg white for silky texture, first do a dry shake: combine blanco tequila (2 oz), yuzu sake/liqueur (1 oz), fresh lime juice (0.75 oz), fresh grapefruit juice (0.5 oz), dry orange liqueur (0.5 oz), ginger syrup (0.5 oz), and 1/2 egg white in a cocktail shaker without ice.

Emulsify
Shake vigorously for 15–20 seconds to emulsify the egg white and build foam.

Ice shake
Add ice (about 1 cup or enough to fill shaker) to the shaker and shake hard for another 10–15 seconds until well chilled. If not using egg white, combine all liquid ingredients with ice and shake hard for 10–15 seconds.

Strain
Double-strain the cocktail into the prepared chilled glass using a Hawthorne and fine mesh strainer to remove ice shards and any solids. The drink should be slightly opaque with a pale pink/peach hue and a gentle foam (if egg white used).

Garnish and finish
Garnish with a thin grapefruit wheel rested on the rim and a slice of candied or fresh ginger skewered through it. Optionally express a strip of yuzu or grapefruit peel over the cocktail to release oils, then discard or rub on the rim.

Serve
Serve immediately. Sip to enjoy the balance of tart yuzu/lime, floral sake, bright grapefruit, warming ginger and the clean backbone of blanco tequila.
