Method
Cocktail
- 1
- 2
Dry Shake (if using egg white)
Add the gin, elderflower liqueur, fresh lemon juice, pear nectar, simple syrup, egg white, and orange bitters to a cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds until the mixture is frothy and emulsified.
- 3
Wet Shake
Open the shaker and add a generous handful of ice. Seal and shake again vigorously for 12–15 seconds until the shaker is very cold (exterior becomes frosty) and the mixture is well chilled.
- 4
No-Egg Option
If not using egg white, combine all liquid ingredients with ice in the shaker and shake vigorously for 12–15 seconds to chill and slightly dilute.
- 5
Double Strain & Pour
Strain the cocktail through a fine mesh strainer into the chilled coupe to remove small ice shards and ensure a silky texture. Aim for a smooth, slightly frothy top from the egg white (if used).
Garnish & Finish
- 6
Float the thin pear slice or place the lemon twist on the rim or gently on top of the foam. If using edible gold flakes, sprinkle a very small pinch onto the foam for a festive shimmer. Serve immediately.
