Prepare and preheat
Preheat the oven to 275°F (135°C). Line a baking sheet with parchment paper. If desired, draw a 7–8 inch (18–20 cm) circle on the parchment as a guide, then flip the paper so the pencil mark is underneath.

Whip egg whites
Ensure the mixing bowl and whisk are completely clean and dry. Add the 4 large egg whites to the bowl. Using a stand or hand mixer, beat the egg whites on medium speed until soft peaks form.

Add sugar and stabilizers
With the mixer running, add the 1 cup granulated sugar gradually, about 1 tablespoon at a time, allowing it to dissolve between additions. After all sugar is added and the meringue is glossy and forms stiff peaks, sift in the 2 tbsp unsweetened cocoa powder and 1 tsp cornstarch, then fold gently with a spatula to create a uniform light brown meringue. Add 1 tsp vanilla extract and 1 tsp white vinegar, folding gently to incorporate.

Shape the pavlova
Spoon the meringue onto the prepared circle on the parchment, mounding into a disc about 7–8 inches wide and creating a slight well in the center to hold cream and berries later. Smooth the sides and top with a spatula or make soft peaks on the edge for a decorative look.

Bake and cool
Reduce oven temperature to 250°F (120°C) immediately after putting the pavlova in. Bake for 60–75 minutes until the exterior is set and slightly crisp but still has a pale color (cocoa will darken it slightly). Turn off the oven, prop the oven door open with a wooden spoon, and let the pavlova cool completely inside the oven for at least 2 hours or overnight to avoid cracking.

Prepare whipped cream topping
In a chilled mixing bowl, combine 1 cup heavy cream, 2 tbsp powdered sugar, and 2 oz mascarpone cheese. Whip on medium-high speed until soft to medium peaks form. Taste and adjust sweetness, adding a bit more powdered sugar if desired.

Prepare berries and chocolate
Rinse and gently dry about 2 cups mixed berries. Hull and quarter the strawberries if large. Finely grate or chop 2 oz dark chocolate.

Assemble
Carefully transfer the cooled pavlova base to a serving plate. Spoon or pipe the mascarpone whipped cream into the well in the center. Arrange the berries over the cream, leaving some scattered on the edges for contrast. Sprinkle the grated dark chocolate over the top and around the edges. Garnish with fresh mint leaves if using.

Serve
Serve the pavlova immediately after assembling for best texture. Any leftover components (cream and berries) can be stored separately in the refrigerator for up to 24 hours; once assembled, serve within 2 hours.
