Preparation of Base

Create the Base Spirit

In a large glass jar, combine the neutral grain spirit, sugar, and water. Stir until the sugar is fully dissolved.

Infusion of Botanicals

Add Botanicals

Add all the dried botanicals (orange peel, wormwood, chamomile, gentian root, cloves, star anise, cardamom, and cinnamon stick) to the jar with the base spirit mixture.

Infuse and Steep

Seal the jar tightly and let it steep in a cool, dark place for at least 2 weeks, shaking it gently every few days.

Strain the Mixture

After 2 weeks, strain the infused mixture through a fine mesh strainer or cheesecloth into a clean bottle to remove all solid botanicals.

Add Fresh Ingredients

Add fresh mint leaves, lemon zest, and bitters to the strained liquid. Let it sit for another 24 hours to meld the flavors.

Bottle the Amaro

Once the flavors have melded, transfer the Amaro Montenegro into a clean bottle. Seal it tightly and store it in the refrigerator or a cool, dark place.
