Make the Seitan
In a mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, onion powder, paprika, salt, and black pepper. Gradually add vegetable broth and knead until a dough forms. Shape the dough into wings.

Cooking the Seitan
Bring a pot of vegetable broth to a simmer. Add the shaped seitan wings and cook for 30 minutes. Remove and let cool.

Coat the Wings
Dip each seitan wing first into the flour, then into the plant-based milk, and finally back into the flour for a thicker batter.

Fry the Wings
Heat oil in a deep pan over medium heat. Fry the battered wings until golden brown and crispy, about 5-7 minutes.

Prepare the Sauce
In a small bowl, mix tahini, chipotle powder, and a little water to create a chipotle tahini sauce.

Toss in Sauce
Once wings are done frying, toss them in buffalo sauce or BBQ sauce.

Serve the hot wings with celery sticks and chipotle tahini sauce.
