Prepare the Filling
In a mixing bowl, combine cooked rice, black beans, and cashew cheese. Add salt and pepper to taste, and mix well.

Warm the Tortillas
Heat the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

Assemble the Burritos
Place a generous scoop of the rice and bean mixture in the center of each tortilla. Top with avocado slices, cherry tomatoes, and shredded lettuce.

Roll the Burritos
Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely.

Cut the burritos in half and serve immediately with additional cashew cheese or your favorite dipping sauce.
