Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow leaves. Rinse them under cold water and pat dry.

Make the Batter
In a bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the water until you have a smooth batter.

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Brussels Sprouts
Dip each Brussels sprout into the batter, allowing any excess to drip off. Carefully drop them into the hot oil in batches, frying for about 4-5 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried Brussels sprouts from the oil and place them on a paper towel to drain. Sprinkle with a little salt while still hot.

Plate the fried Brussels sprouts and drizzle with balsamic reduction. Serve with garlic aioli on the side for dipping.
