    Prepare the Vegetables

    Slice the onion and bell peppers into thin strips. Heat olive oil in a skillet over medium heat, and add the onion and peppers. Sauté until the vegetables are soft and slightly caramelized, about 8-10 minutes. Season with garlic powder, salt, and black pepper.

    In the same skillet, add the sliced seitan to the cooked vegetables. Cook for an additional 5 minutes until the seitan is heated through and slightly browned.

    Reduce the heat to low and add the cashew cheese on top of the seitan and vegetable mixture. Cover the skillet to allow the cheese to melt for about 2-3 minutes.
