Prepare the Cauliflower
Preheat your oil in a deep fryer or large pot to 350°F (175°C). In a bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and onion powder. Dip the cauliflower florets in the batter and fry them until golden brown. Remove and set aside.

Cook the Macaroni
In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Vegan Cheese Sauce
In a saucepan, combine plant-based milk, nutritional yeast, garlic powder, onion powder, salt, and black pepper. Heat over medium heat, whisking until smooth and thickened.

Combine and Toss
Add the cooked macaroni to the cheese sauce and stir well to combine. Toss in the fried cauliflower and buffalo sauce until evenly coated.

Serve the Buffalo Mac ‘n Cheese hot, garnished with additional buffalo sauce if desired, alongside the garlicky greens.
