Marinade Preparation

    Prepare the chiles

    Remove the stems and seeds from the dried guajillo and ancho chiles. Place them in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes until softened. Drain and set aside.

    Make the marinade

    In a blender, combine the softened chiles, garlic, onion, apple cider vinegar, ground cumin, ground oregano, salt, black pepper, pineapple juice, and sugar. Blend until smooth.

    Marinate the pork

    Cut the pork shoulder into small pieces and place in a large bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the pork

    Heat a grill or skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Grill or sauté the pork for about 10-15 minutes, turning occasionally, until cooked through and slightly charred.

    Prepare the pineapple

    While the pork is cooking, chop fresh pineapple into small chunks. You can also grill the pineapple for a few minutes for added flavor.

Assembling the Tacos

    Warm the tortillas

    Heat the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side until warm and pliable.

    Assemble the tacos

    On each tortilla, place a portion of the grilled pork, top with fresh pineapple chunks, chopped cilantro, and slices of radish. Drizzle with salsa verde and a squeeze of lime juice.

    Serve the tacos immediately with lime wedges on the side for extra flavor.
