Dough Preparation

    Boil Water and Butter

    In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

    Add Flour

    Once the mixture is boiling, remove it from heat and quickly stir in 1 cup of all-purpose flour until fully combined. Return the saucepan to low heat and stir for about 1-2 minutes until the dough forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Remove the saucepan from heat and let the dough cool for about 5 minutes. Then, add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Frying Churros

    Heat Oil

    In a deep frying pan or large pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Dough

    Using a piping bag fitted with a star-shaped nozzle, fill the bag with the churro dough. Carefully pipe the dough into the hot oil, cutting it into about 6-inch lengths using scissors.

    Fry Churros

    Fry the churros in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove them from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Coating Churros

    Prepare Sugar Coating

    In a shallow bowl, mix together 1 cup of granulated sugar and 1 teaspoon of ground cinnamon.

    While the churros are still warm, roll them in the cinnamon-sugar mixture until fully coated.
