Preparing the Enchilada Filling

    Cook the Aromatics

    In a skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

    Add Garlic and Spices

    Add the minced garlic to the skillet and cook for an additional 1 minute. Then stir in the cumin, chili powder, salt, and pepper. Cook for another minute until aromatic.

    Combine with Chicken

    Add the shredded chicken to the skillet and mix well, cooking until heated through, about 3-5 minutes. Remove from heat and set aside.

Assembling the Enchiladas

    Prepare the Tortillas

    Preheat the oven to 375°F (190°C). In a separate skillet, lightly heat the corn tortillas one at a time until they are pliable, about 30 seconds per side.

    Fill the Tortillas

    Place about 1/4 cup of the chicken filling in the center of each tortilla. Roll them up tightly and place seam-side down in a greased baking dish.

    Top with Salsa and Cheese

    Once all tortillas are filled and placed in the baking dish, pour the salsa evenly over the top. Sprinkle the shredded cheese on top of the salsa.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm with additional salsa if desired.
