1. Prepare the Broth

In a saucepan, heat the chicken broth over medium heat until it's warm. Keep it on low heat to maintain warmth while you cook the risotto.

2. Sauté Aromatics

In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.

3. Cook the Rice

Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is well-coated and slightly toasted. Pour in the white wine and cook, stirring constantly, until the wine is mostly absorbed.

4. Add Broth Gradually

Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. Continue this process for about 18-20 minutes, until the rice is al dente.

5. Cook the Shrimp

In the last few minutes of cooking, add the shrimp to the risotto. Stir until the shrimp turn pink and are cooked through, about 3-5 minutes.

6. Finish the Risotto

Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.
