    Clean the Mussels

    Rinse the mussels under cold water and scrub the shells with a brush to remove any debris. Discard any mussels that are open and do not close when tapped.

    Prepare the Vegetables and Aromatics

    Dice the shallots and tomatoes, and grate the fresh ginger. Chop the mixed herbs and set aside.

    Sauté the Aromatics

    In a large pot over medium heat, add a small amount of oil. Add the diced shallots and grated ginger, and sauté for about 2-3 minutes until they are soft and fragrant.

    Add Tomatoes and Sherry

    Add the diced tomatoes to the pot and stir for another 2 minutes. Then pour in the sherry, and bring to a simmer.

    Cook the Mussels

    Once the mixture is simmering, add the cleaned mussels to the pot. Cover the pot with a lid and allow to steam for about 5-7 minutes, or until the mussels have opened up.

    Add Herbs and Seasoning

    Remove the pot from heat and add the chopped mixed herbs, salt, and black pepper. Stir gently to combine.

Serving

    Plate the Mussels

    Use a slotted spoon to transfer the mussels to serving bowls, then ladle the broth and vegetables over the top. Serve immediately with crusty bread.
