Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

    Add Butter

    Cut the unsalted butter into small cubes and add to the flour mixture. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

    Incorporate Eggs and Water

    Add the egg yolks and cold water to the mixture. Stir until the dough begins to come together.

    Knead the Dough

    Transfer the dough to a lightly floured surface. Knead gently for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a large skillet over medium heat, add a splash of oil and sauté the chopped onion and garlic until translucent, about 5 minutes.

    Add Meat and Vegetables

    Add the ground beef or chicken, bell pepper, chopped olives, cumin, paprika, salt, and pepper. Cook until the meat is browned and cooked through, about 10-15 minutes. Remove from heat and let cool.

Assembling and Baking

    Roll Out the Dough

    On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter or a glass to cut out circles of dough about 4-5 inches in diameter.

    Fill the Empanadas

    Place a spoonful of the filling in the center of each circle. Be careful not to overfill.

    Seal the Empanadas

    Fold the dough over the filling to create a half-moon shape. Crimp the edges with a fork to seal.

    Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.

    Bake in the preheated oven for 20-25 minutes or until golden brown. Remove and let cool slightly before serving.
