    Prepare the Pork Belly

    Score the skin of the pork belly in a crisscross pattern, ensuring not to cut too deep into the meat. This helps the fat render out during cooking.

    Season the Pork Belly

    Rub the pork belly generously with salt, black pepper, and minced garlic cloves. Then, sprinkle the fresh rosemary over the top.

    Sear the Pork Belly

    In a large skillet, heat the olive oil over medium-high heat. Place the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy.

    Slow Cook the Pork Belly

    Transfer the pork belly to a slow cooker. Pour in the soy sauce and apple cider vinegar. Cook on low for 6-8 hours or until the meat is tender and easily pulled apart.

Apple Sauce

    Cook the Apples

    In a medium saucepan, add the chopped apples and a splash of water. Cook over medium heat until the apples are soft, about 15-20 minutes.

    Stir in the brown sugar, cinnamon, and lemon juice. Cook for an additional 5 minutes, stirring occasionally.
